Peanut Butter Fingers

Since I am making a last desert for a while, I am making a family favorite. I thought I would share. Enjoy!

Preheat oven to 350

cream: 1/2 c butter
1/2 c sugar
1/2 c packed brown sugar

blend in: 1 unbeaten egg
1/3 c peanut butter
1/2 tsp soda
1/4 tsp salt
1/2 tsp vanilla

stir in: 1 c flour
1 c quick oats

spread in 13 x 9 pan
bake for 20 to 25 min
sprinkle with 1 c semi sweet chocolate chips (optional)
let stand for 5 min

combine in a small bowl : 1/2 c sifted powdered sugar
1/4 c peanut butter
2 to 4 tbls evaporated milk

spread chocolate evenly, if you used the chips
drizzle peanut butter mixture

let cool then cut into bars

Crock Pot Roast Beef

Heather (of Faith Lifts, Moms of Grace and Swank Web Style) wants everyone to share a good Crock Pot recipe. Well, I LOVE my crock pot, so… :)

Rub roast with equal parts salt, pepper, onion powder, garlic powder and/or any other seasonings that you prefer. Be creative. You know what your family likes. Place beef roast - I use chuck, shoulder or when I can find it sirloin tip roast (My hubby prefers sirloin and the roast is usually not that expensive) - in crock pot with enough water to cover the bottom of the pot. 1 packet of Lipton Onion Soup mix or 2 or 3 cubes of beef bullion. Also add any carrots, potatoes or celery that you will be using, at this time. I also add a dash of Worcestershire Sauce at this time.

Mayonnaise CakeOven 350 degrees

flour 2 9″ cake pans - When you flour your pans use cocoa instead of flour. It keeps white marks off your pretty chocolate cake.

3 cups flour
1 1/2 cup sugar
5 T cocoa
2 1/4 t baking soda
2 1/4 t baking powder
3/4 t salt
1 1/2 cup mayonnaise or miracle whip salad dressing
1 1/2 cup water
2 t vanilla

bake for 20 min or until toothpick inserted in middle comes out clean

We use canned frosting when cooled, but if you have a great creamy chocolate frosting recipe, I would love to hear about it.
